Ingredients
Milk - 1/2 cup
Butter or vegetable oil - 4 tablespoons
Sugar - 3/4 cup
Ripe Bananas Mashed - 2
Eggs beaten - 2
Oatmeal Powder - 3/4 cup
Whole Wheat Flour - 3/4 cup
Baking Soda - 1 tsp
Baking Powder - 1/2 tsp
Salt - 1/8 tsp
Ground cinnamon - 1/2 tsp
Ground nutmeg - 1/4 tsp
Ground cloves - 1/8 tsp
Coarsely chopped mixed nuts - 3/4 cup
Raisins - 3/4 cup
Method
- Preheat microwave oven to 180°c or 375°F
- Put milk, butter, and sugar in a pan and stir over low flame until just melted.
- Remove pan from the flame. Now, add mashed banana to lower the temperature, then stir in beaten eggs.
- Combine oatmeal powder, whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, mixed nuts, raisins and stir into the pot.
- Bake approximately 1/2 an hour for cupcakes, and approximately 50 minutes for loaves depending on the size of your pan.
- Check for doneness by inserting in a toothpick, should come out dry.
