Banana Cake

Banana Cake

Ingredients
Milk - 1/2 cup  
Butter or vegetable oil - 4 tablespoons 
Sugar - 3/4 cup 
Ripe Bananas Mashed - 2 
Eggs beaten - 2
Oatmeal Powder - 3/4 cup
Whole Wheat Flour - 3/4 cup 
Baking Soda - 1 tsp
Baking Powder - 1/2 tsp
Salt - 1/8 tsp
Ground cinnamon - 1/2 tsp
Ground nutmeg - 1/4 tsp 
Ground cloves - 1/8 tsp 
Coarsely chopped mixed nuts - 3/4 cup
Raisins - 3/4 cup  

Method

  1. Preheat microwave oven to 180°c or 375°F
  2. Put milk, butter, and sugar in a pan and stir over low flame until just melted.
  3. Remove pan from the flame. Now, add mashed banana to lower the temperature, then stir in beaten eggs.
  4. Combine oatmeal powder, whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, mixed nuts, raisins and stir into the pot.
  5. Bake approximately 1/2 an hour for cupcakes, and approximately 50 minutes for loaves depending on the size of your pan. 
  6. Check for doneness by inserting in a toothpick, should come out dry.
Note: If the color is already golden brown but the banana cake is still wet, cover with foil and continue baking for few more minutes.
