Jalebi (Sweet) Recipe

Jalebi, Jilapi, Zulbia, or Jilawii is a delicious sweet dish or dessert that you can prepare in your own kitchen. Jalebi is made by deep-frying maida flour batter in circular shapes, which are then dipped in sugar syrup for some time. They are specially popular in South Asia during Ramadan and Diwali.

Jalebi

Ingredients
Maida (Plain Flour) – 2 cups
Corn Flour – 1/4 cup
Baking Soda – a large pinch
Curd – 1 1/2 cups, thick
Ghee – 1/4 cup
Oil for frying
A pinch of Orange Edible Colour

For Sugar Syrup
Sugar – 2 cups
Water – 2 cups
Saffron Strands – few
Rose Essence – few drops (optional)
Cardamom Powder – 1/4 tsp

Method
  • In a bowl mix maida, corn flour and baking soda .
  • Add ghee and food colour and mix well.
  • Add the curd and sufficient water to make a thick batter.
  • Keep aside for 8-9 hours or overnight.
  • Take a ladle, mix well until it thickens and has pouring consistency.
  • For preparing sugar syrup, heat water in a pan over medium flame.
  • Add sugar and mix until completely dissolved.
  • Simmer till it attains one string consistency.

Sugar Syrup for Jalebi
  • Add the saffron, cardamom powder and rose essence and stir well.
  • Heat oil for deep frying over medium flame.
  • Fill a piping bag (or a ziplock bag with a small hole) with the batter.

  • Gently squeeze it in the hot oil and form spirals.

  • Fry until golden brown and crisp.

  • Remove from the oil, drain excess oil and drop them in the sugar syrup.
  • Leave them in the syrup for 2 to 5 minutes.
  • Take out and serve warm or at room temperature garnished with saffron strands.
  • Also, you can serve it with rabdi and basundi.
