Directions
- Preheat the oven to 160 degrees C.
- In a bowl, mix together plain flour, baking powder, salt, sugar, and bicarbonate of soda.
- Blend buttermilk and eggs together. Now, add it to the flour mix and knead it to form a soft dough.The dough should be soft enough to enough to pull it together into a loose ball but no longer.
- Put the dough on a lightly floured baking sheet and dust generously with flour.
- Make a deep cross on the dough with as sharp knife.
- Bake for about an hour, or until a knife or toothpick inserted into bread comes out clean.
- Cool on a wire rack if you prefer a crunchy crust. Or, wrap in a clean drying towel or cloth for several hours, or overnight, for best flavour.
- Soda Bread is ready.
- Serve it with butter or your favourite jam.
