Palak Paneer Recipe

Palak paneer is a famous vegetarian dish from the Indian state of Punjab. It is amongst the top recipes in many of the Indiana restaurants. It consists of thick creamy curry based on palak (spinach) puree and paneer (cheese) cubes. This is a paneer recipe that is very much enjoyed by my family.
Palak Paneer
Ingredients
A large bunch of palak (spinach)
150 gms paneer cut into cubes
2 medium sized onions (chopped finely)
3-4 garlic pods (crushed)
1/2 tbsp grated ginger
2-3 green chillies (chopped finely)
1large Tomato
1/2 tsp cumin seeds
1 Bay leaf
1 inch cinnamon stick
4 cloves
1 -1/2 tsp coriander powder
1 tsp red chilli powder
Butter (or desi ghee) + oil for cooking 

Method
  1. Wash the spinach properly with water.
  2. Now, blanch the spinach leaves. For blanching, boil water in a pan and add salt to it. When the water is boiled, turn off the heat and add the spinach (palak) leaves to that water. Cover the pan and let the spinach leaves sit for 3-4 minutes.
  3. Take out spinach (palak) leaves from water and blend it with ginger, garlic and green chilies just for a minute to make a smooth puree.
  4. Blend the tomatoes separately and keep aside.
  5. Heat a mix of butter and oil in a wok. Then add, cumin seeds, asafoetida, tej patta, cinnamon, and cloves. Stir fry for few seconds.
  6. Now add chopped onion. Sauté till the onions becomes golden in color.
  7. Next, you have to add tomato puree and fry it till it leaves oil. Then add the spinach puree to it. Simmer for about 10 minutes covered.
  8. Add paneer and mix it gently with the spinach puree. Simmer for another 3-4 minutes covered. Further, turn off the heat and let it be covered for few minutes.
  9. Palak paneer is ready to be served with naan, parathas, or steamed rice.
Note: You can shallow fry the paneer cubes. Also, you can add cream once the palak paneer is ready.
