Dhokla

Ingredients
2 cups Gram flour (besan)
1 cup beaten curd
1/2 tsp turmeric powder
1 tsp ginger-green chilli paste
1 tbsp lemon juice
1 tsp eno salt
1 tsp sugar
Salt to taste
1 tsp mustard seeds
2 tbsp oil
2 tbsp fresh coriander leaves chopped
1/2 cup coconut scraped

Method

  1. Take gram flour in a large bowl. Add beaten curd, salt, 1/2 tsp sugar and 1 cup warm water. Mix it avoiding lumps.
  2. Now add turmeric powder and green chilli-ginger paste and mix.
  3. Heat the steamer and grease a thali.
  4. Now add lemon juice, eno salt, one tsp oil to the batter and whisk briskly.
  5. Pour batter into greased thali and place it in the steamer.
  6. Cover the steamer with the lid and steam for 10 minutes.
  7. After 10 minutes, take out the thali and let the dhokla cool.
  8. After it cools down, cut into squares and keep in a plate.
  9. Heat remaining oil in a separate pan. Add mustard seeds. When the seeds begin to crackle, add water, salt and the remaining sugar to it.
  10. Now remove it from the flame and let  it cool. After it cools down dip each piece of dhokla one by one in that water for 30 seconds and take out in a plate.
  11. Garnish it with chopped fresh coriander leaves and scraped coconut.
